Dinner with friends

Or, as one of them termed it:  Dinner in Allentown!

Sunday night we had a few friends over for a chili supper.  We had the best time!  Becky & Barney brouhgt nacho fixings; Pam and Steve brought margarita makings (which they had to do after he bragged in New Orleans about how good his margaritas are!  But I guess it's not bragging if it's true, right?)  Joyce and Richard brought a fabulous chocolate cheesecake.  I made the chili and some cornbread and Walter contributed tamales.  He wanted to get some from a joint at Perkins and Knight Arnold, but ran out of time.  These were from Schnuck's and they were ok.

CHILI WEATHER!

It’s chili weather in Blowing Rock!  Believe it or not, Ray's Weather is calling for snow next week!  Saturday was a lazy day and just called out for a big pot of chili.  We invited our neighbor, Jim W., to join us.  Walter fixed grilled cheese sandwiches and we had these cookies for dessert.

This is my go-to chili recipe - it can't be bad if it comes from Emeril!

After the chocolate chip cookies I made last week, Walter told me that his very favorite cookie is Oatmeal Raisin.  So I found this recipe and they were good - so chewy!  They were a little sweet for me, though, so next time I'll omit half the granulated sugar like it suggests in the notes and see how that works.

Emeril’s Chili

EMERIL’S CHILI
INGREDIENTS
2 T veg oil
2 c chopped onions
Salt & cayenne pepper
¼ c tomato paste
2 lb stew meat or ground chuck
2 c beef stock
3 c crushed tomatoes
1 T chili powder
2 t ground cumin
1 t crushed red pepper
2 t dried oregano
2 T chopped garlic
1 c dark kidney beans
2 T all purpose flour
4 T water
1 ½ c grated cheddar cheese
Tortilla chips, optional
Sour cream
Jalapeno peppers
 
INSTRUCTIONS
1. Heat oil in a large saucepan. Add onions & sauté until soft. Season with salt & cayenne.
 
2. Stir in meat, brown, then drain and return to saucepan. Add chili powder through beans.

3. Bring to a boil, then reduce heat & simmer, uncovered, for 1 hour.

4. In a separate small bowl, mix flour & water together. Slowing stir into beef mixture and continue to cook for 30 minutes.

5. Add salt & cayenne to taste.

6. Spoon chili over chips, if desired, and garnish with cheese, sour cream, and jalapenos
